Dinner with the Hunters

 
 
 
Bacon wrapped elk backstrap... Best way I've ever had elk.. yumm....

This week we had Hunters in town from WI. One is dating my best friend Lindsey, who they brought along. She & I had a great week together. The hunters got two bull elk while they were here. On Friday night before they left Grant made an awesome elk dinner that included pumpkin au gratin.

Carrot Harvest

Didn't do too many veggies this year but these carrots turned out nice & were very tasty. Found the red kuri squash (in the background) at the store, had never had it before. We roasted it & had it on mini whole wheat pizzas. Anyone else used them before?

 Spent the afternoon yesterday at Mom & Dads for Father's Day. Grant made us a few pizzas that were great, then we spent some time on the patio. Steve and Kathleen stopped in for a bit too.

Met Mom & Dad in Durango on Monday. Decided to introduce them to Sushi for their first time ever at East by Southwest which has sushi and fusion dishes. Mom seemed to enjoy, don't know if Dad was totally sold by the experience. Mom's favorite was the soft shell crab roll shown above.
